African Okra Stew Recipe
Want a juicy, rich, satisfying stew that is filling? This is it. Our okra stew version is derived from my Liberian background.
Ingredients
- 2-pound Okra
- Fresh lima/butter beans
- 3 Tomatoes/ 1 tomato can
- 1 whole onion
- 3 cloves Garlic
- 1 Habanero(optional)
- 1/3 cup sunflower oil
- 4 cups broth
- ¼ cup salsa
- Seitan(optional)
Instructions
- Dice the onion and the garlic cloves, add 1/3 cup sunflower oil to your cooking pot or pan.
- On medium heat saute the garlic until it turns into a beautiful golden brown and then add onion.
- Add okra to the garlic and onion, stir on medium heat
- Grate tomatoes, if using canned tomatoes drain the tomato juice to control the salt in the canned tomatoes.
- Add tomatoes to the mixture and stir
- Add 1/4 cup of salsa to the mixture for sweetness, continue stirring.
- Leave the mixture to reduce, all the liquids from the Salsa and tomatoes must reduce. When the reduction process is complete you won’t notice any liquids dripping from the tomatoes on the side of the pot.
- Add 4 cups of broth to the okra stew.
- Add 1 tablespoon salt and habanero (optional step). Stir the stew
- While simmering add lima beans to the stew.
- Add seitan (optional step)
- Stir the stew and mix the ingredients in the pot for a better cook. Leave the stew to simmer.
- As the lima beans okra stew nears completion you will notice that the stew has no slime.
- Add 2 tablespoons of olive oil (optional step). Allow the okra stew to simmer.
