To be specific, Central Africans cherish red palm oil for its distinctive flavor. Other thickeners include crushed melon, gourds, or pumpkin seeds. West Africans call them egusi while Central Africans refer to them as mbika. Another thickener is okra (gumbo) and crushed seed kernels of wild mango (odika, dika, or etima).
