  • 1 TBSP Soy sauce
  • 1 TBSP garlic mince
  • Half yellow onion chopped big
  • 1 TBSP ginger paste

  1. Heat Vege oil in a wide cooking pan between medium and high heat.
  2. Saute garlic and ginger until they turn golden brown.
  3. Saute half onion chopped for less than a minute.
  4. Move the mixture over to one side of the pan and saute frozen mixed vegetables on low medium heat for about 2 minutes.
  5. Add Five Spice seasoning and sprinkle 1/4 teaspoon of salt and black pepper. Stir to combine all the ingredients.
  6. Add chilled cooked rice and seasoned fried tofu.
  7. On top of this, pour Teriyaki sauce and stir fry between medium and high heat for 5 to 8 minutes.

Notes

  • To have a crispy feel, don't overcook the vegetables.
  • Store leftovers in an airtight bowl and keep it in the fridge for up to 2 days.
  • Use chilled-not frozen, cooked rice because it fries well.
  • Also, use a non-stick or cast iron pan so that the rice doesn't stick on the bottom of the pan as it cooks. If either of these is unavailable, any pan will do- just be a bit keener with stirring.
