Ingredients

  • 3 TBS Avocado oil
  • 3 cloves garlic
  • 1 TBS ginger
  • 1/2 TSP salt
  • 1 TBSP flour
  • Mixed vegetables (desired amount)
  • 1/4 Onion
  • 14 oz bottle Teriyaki sauce
  • 1/4cup water (optional)
  • 2 TBS Maple syrup (optional)
  • 1 TBS Lemon juice (optional)
  • 2 stalks of Green onions (garnish optional)

Instructions

    1. In a large skillet, warm 3 tablespoons of avocado oil on medium heat. Recommend avocado oil over grapeseed oil because i didn't know better I the time. Avocado is the best frying oil.
    2. When warm enough, add 3 garlic and 1 tablespoon of ginger(minced) and sauté for about 2 minutes.
    3. Add 1/4 onion diced and blanched mixed vegetables. Stir to combine and sauté for about 2 minutes on medium heat.
    4. Sprinkle 1 tablespoon of rice flour and 1/2 a teaspoon of salt and mix them in thoroughly. If you have other types of flour or thickener that is good too.
    5. Add bell peppers, and grape tomatoes. Add some rice flour (half teaspoon amount) if the consistency looks watery. Stir the mixture to combine and reduce the heat.
    6. Pour 14 oz store-bought or pre-made teriyaki sauce over the vegetables and stir gently. Let it simmer for about 10 minutes and do not cover the pot.
    7. Turn off the heat and garnish your vegetarian teriyaki stir fry with sesame oil and chopped green onions.
    8. Enjoy it as-is OR serve over rice/grains OR relish it with your protein of choice.

Notes

  • You can bulk up this vegetarian delicacy with any protein. To do this, crisp the protein before adding the vegetables so that they don't get overcooked.
  • Be sure to slice your veggies into strips or sizeable pieces for even cooking. To save time, you can opt to buy frozen stir fry veggies from the store.
  • Customize this recipe by adding any veggies you like. For a quicker meal, use those that cook faster. Harder vegetables may need blanching first.
  • Keep leftovers in an airtight container in the fridge for a few days or freeze for up to 3months. From the freezer, defrost fully before reheating.
