Every time I make this soup I drink it like I am drunk with happiness. Egyptian red lentil soup is creamy, hearty, savory, and makes me feel amazing! Give it a try you might like it.
Note, the simplicity of Egyptian red lentil soup is astounding. I am grateful for my connection with foods in general and how deeply they make me feel; Yes I am a touchy feely person lol.

Our Egyptian- Lebanese red lentil soup hit all marks. It is delicious (we all like that), hefty (food that stick to the bones), has healthy fats with good amount of protein, and best of all it is a one pot meal! A vegetarian’s wet dream!
To level with you, I like good food but I don’t like to spend hours cooking it. Which is why one pot meals is a top preference. This Egyptian- Lebanese red lentil soup can be had for breakfast, lunch or dinner. Trust me I’ve eaten it all those times.
Your garnish says a lot about you
Note, I will eat anything with cilantro in it, which shows how much I love it! lol! First, I didn’t know there are people who do not like cilantro. Apparently, it taste like soap to them. Yikes!
What’s worst, some people say those who do not like cilantro have serial killer behaviors. It is a rumor or false statement, right? Anyways, if you dislike cilantro, do not be alarmed. I don’t think you are a serial killer. Simply use fresh parsley in your Egyptian red-lentils soup or omit it from the recipe. You must use fresh garnish, it makes the soup sing!
Spice is life! Lift up your red lentil soup flavor!
Africans love their spices! I know there are many red lentils soup recipes out there. What makes this one special is the spices. Egyptian and Lebanese spices tend to be similar. Note, fresh is best. Must use freshly ground coriander seeds, it elevates the flavor. Understandably, some people cannot digest onions or garlic, do not worry. The spices listed below work together nicely, therefore customize to your liking.

- 1.5 cups Red Lentils
- ¼ (Quarter) yellow onion diced
- 2TBs Oil
- 2 Cloves garlic mince
- 6.5 cups water
- half tsp coriander*
- 1.5 tsp Cumin
- 1tsp chili powder (optional)
- 1 bunch cilantro (optional)
- half Tablespoon salt
- Heat the oil in a cooking pot. Keep the flame medium-high.
- Add 2 cloves of minced garlic and a quarter of chopped onions.
- Sauté until onion is translucent.
- Meanwhile, wash the lentils and set aside to soak.
- Add half a teaspoon of crushed coriander seeds or ground coriander t the onion mixture. Stir-fry for a 2 minutes.
- Add soaked red lentils and fry for a couple of 2 minutes.
- Pour six and a half cups of water, mix all the ingredients and cover it. Keep the cover of the pot slightly opened. You can tilt the lid to keep prevent the beans from foaming over.
- Bring the water to a boil. Then cover it completely. Let it boil for 20-30mins.
- Remove the lid and properly mix the contents.
- Reduce the heat and Simmer the soup.
- Add your salt, ground cumin. (Just so you know, cumin is the most common spice used almost in all Egyptian recipes). coriander and chili powder. Chili powder is optional. You can add or lessen the quantity as per your tastes.
- Mix everything and simmer for 3 minutes on low heat.
- Serve hot. You can garnish the soup with cilantro if you like. Don't forget your pita bread. Enjoy!
