Delicious Pantry Raid Recipe

The noodles have been sitting since last winter and the Enoki Mushrooms were about to spoil so it makes perfect sense for a pantry raid recipe. Easy, delicious, and comforting leftover noodles recipe.

Ingredients

  • Whatever leftover you have in your cabinet or refrigerator

These are the leftovers I used in this Pantry Raid

  • Szechuan peppercorn
  • Asian sauce
  • Some TBSP Hoisin Sauce
  • Some soy sauce
  • Some cooking wine
  • Leftover Noodles
  • Oil
  • Some minced garlic
  • Some onions
  • Leftover mix veges
  • Forgotten Enoki mushrooms
  • Leftover Shitake mushrooms
  • ¼ leftover Tofu

Instructions

    1. To make this juicy leftover noodles recipe, begin with boiling water for cooking the noodles. Choose an extra deep pot because it ensures the noodles are fully submerged.
    2. Add water to the cooking pot and bring it to a boil.
    3. As you wait for the water to boil, prepare your seasoning to spice up this healthy enoki mushroom recipe. In a bowl, add some Szechuan peppercorn, Asian sauce, hoisin sauce, soy sauce, and cooking wine. Stir to combine.
    4. When the water is ready, add noodles to the boiling water, and cook for 4 minutes. Stir occasionally to prevent the noodles from sticking together. To prevent the noodles from getting mushy, ensure the water gets to a complete boil before adding the noodles.
    5. After the noodles are done, take the pot off the heat, and drain. Add to a colander and rinse with cold water stirring occasionally. Set it aside for later use.
    6. To stir fry our seasoned tofu recipe, heat a large non-stick pan over medium-high heat. Sprinkle oil and add minced garlic, ginger paste, onion, and leftover frozen mixed veggies. Cook stirring often until the veggies are tender with an alluring fragrant, about 6-7 minutes.
    7. Reduce the heat to a medium and add Enoki mushrooms and leftover shiitake mushrooms. Gently stir to combine as it cooks until the mushroom wilt, for about a minute.
    8. For a great high-protein meals vegetarian, add ¼ leftover tofu and the cooked noodles. Mix thoroughly ensuring everything settles in nicely.
    9. To spice up the juiciness and flavor of our leftover noodles recipe, add the mixture of Szechuan peppercorn, Asian sauce, hoisin sauce, soy sauce, and cooking wine. Stir to soak it in completely. Finish and remove off heat.
