This healthy lettuce wraps recipe is fun and easy to build the filling noodle boats, and the whole process does not take too much time at all. 

With easily accessible ingredients, this recipe tops the plant based food trends with little effort, ensuring that it delivers a healthy; filling and delicious vegetarian meal. The peanut sauce is rich in flavor, and the creaminess of the sauce really soaks into the tofu and the noodles. The freshness of the iceberg lettuce, cilantro and basil combined with the tofu, noodles and peanut sauce makes this dish an absolute hit!

Ingredients

  • 2 TBSP Hoisin Sauce
  • 1 Block Tofu
  • Rice Vinegar (OR White Vinegar)
  • 1.5 Creamy peanut butter
  • ⅓ cup Vegetable Broth (OR Water)
  • Rice Vermicelli Noodles
  • Iceberg Lettuce
  • Cilantro bunch
  • Thai basil
  • Cucumbers
  • Crushed peppers (optional)

Instructions

  1. Combine 2 tablespoons hoisin sauce; 2 tablespoons rice vinegar; 1.5 tablespoons of peanut butter; and ⅓ cup vegetable broth in a shallow bowl and mix well
  2. Slice the block of tofu into desired pieces and place in the tofu marinade. Let it sit overnight or 20mins.
  3. Place a pan on the stove top at medium heat and add 1.5 tablespoons of oil. 
  4. Place the tofu slices into the pan, gently pour the excess marinade into the pan and cook as desired. Once cooked, place the tofu to one side and leave to rest. 
  5. Put the rice vermicelli noodles in a glass bowl.
  6. Bring a pot to the boil and once boiled, pour hot water over the noodles and leave for 5 to 7 minutes. Thereafter, strain noodles and rinse with cold water. 
  7. Next, we make the peanut sauce for the noodles boat. In a small bowl, measure 1 teaspoon of peanut butter; 1.5 teaspoon hoisin sauce; desired amount of rice vinegar; and 2 teaspoons of water.(Spice is optional) Mix well. 
  8. Then, we build an edible noodles boat. Place a washed iceberg lettuce leaf on a large plate and this will be the base of your boat.
  9. On top of this, place some cilantro leaves and Thai basil leaves. Then, add the sliced cucumbers onto the boat, followed by a few pieces of tofu. 
  10. Next, add some noodles to the boat, and drizzle some of the peanut sauce onto the noodles. 
  11. Now, your edible boat is complete, and ready to eat!
