Peanut butter marinade recipe nutritional value
Who cares about the nutritional value, there’s peanut butter! Isn’t that enough? Kidding… maybe.
Peanut butter is made and sold by many brands, so the nutritional value is not set. Nutrition research suggests sticking to brands that only have peanuts, and maybe salt. This is to avoid ingredients like added sugar that make the product less healthy. You can even use homemade peanut butter in this roasted maitake mushroom recipe. If you have leftovers from making your homemade nut butter, definitely try this peanut butter stew.
One of the best things about peanut butter is its protein content. It contains about 25% of protein. And as peanuts are a legume, you are technically eating your vegetables. Again, kidding. Peanut butter may be high in protein but it is also much higher in calories and lower in nutrition compared to plant foods like spinach. Which, according to a nutrition facts blogger, is recommended by professionals in order to promote a healthy weight. Alternative medicine researchers claim oyster mushrooms are popular in Africa, and found in different West African food recipes.
But what about roasted maitake mushroom recipes?
Maitake, or ‘hen of the woods,’ is another great mushroom we used in this peanut butter marinade recipe. Just like the roasted king oyster mushroom, maitake is low in calories and in cholesterol. Compared to oyster mushrooms, maitake offers a more earthy and meaty flavor. Yet, the two can be used in similar recipes. Note, Maitake melted in my mouth after roasting it so if you are into such texture, try it out.

I served it with some fried rice by using old take-out leftovers, and old marinade, paired cooked brown rice with millet leftovers, and added sautéed kale and onions, and it was good! Roasted Mushrooms Peanut Butter Marinade Recipe
When it comes to deciding on which type of marinade to use on your roasted king oyster mushrooms, this delicious peanut butter marinade recipe will quickly make its way to the top of your list!
With just a handful of flavor packed ingredients, you will be cooking up a storm in no time (Well, 13 minutes to be precise, but you know what I mean😉). This west african street food can be enjoyed with a side of your choice, fried rice is a great option!
Peanut butter marinade on roasted mushrooms gives this plant based dish a nutty flavor and crispy texture that could easily be mistaken for shredded meat. This Liberian recipe will satisfy your palate and will soon become a favorite in your collection of West African food recipes.
Ingredients
- 2 TBSP Peanut Butter
- 2.5 TBSP Oil (peanut grapeseed oil was used, but I recommend using avocado oil)
- 8oz Mushroom (preferably Oyster mushrooms and hen of the woods (Maitake)
- 1 tsp salt
- ¼ tsp black pepper
- ¼ Onion
- 1 garlic
- 1 Habanero Pepper
- Zeal & Determination😊
Instructions
- Place 8 ounces of mushrooms in a bowl and gently remove the dirty parts with a sharp knife.
- Gently separate the mushrooms into smaller pieces and thoroughly inspect for any missed dirt.
- Dice the ¼ onion, 1 garlic and 1 habanero pepper finely and place in a separate bowl.
- Then, add 2 tablespoons of peanut butter in a medium size bowl.
- Add 2.5 tablespoons of oil to the peanut butter and gently mix.
- Then add the onion, garlic and habanero pepper.
- Add 1 teaspoon of salt and ¼ teaspoon of black pepper to this bowl.
- Then, stir all of these ingredients until mixed in well.
- Add another ½ tablespoon of oil and mix well.
- Add about 2 teaspoons of water (A tiny amount, but makes a difference to the mixture).
- Scoop the peanut butter marinade into the bowl with the mushrooms.
- Get comfortable with your food and thoroughly mix this all together.
- Leave marinade to sit overnight.
- Set oven to 420℉
- Place mushrooms on an oven pan and leave to bake for 13 minutes tops.
- Serve and enjoy this Liberian roasted mushroom dish while hot
