This Liberian recipe of sautéed collard greens offers you a delicious vegetable twist. Collard greens is one of the best hearty west African food. Did you know there are myriads of collard greens benefits?

They are a great source of vitamin A, vitamin C, vitamin K, and calcium. Plus, collard greens are rich in iron, magnesium, and vitamin B-6. Give this classic, nutritious dish a chance.

Following are the steps for the preparation of this Liberian recipe.

Ingredients

  • 4 bundles of collard greens
  • 1/2 cup of vegetable oil
  • 3 cloves of garlic
  • 1 to 2 onions
  • 14+ ounces canned tomatoes
  • 1 TBSP of baking soda
  • 1 tsp of salt
  • 2.5 cups of vegetable broth
  • 1 diced habanero
  • 430 grams of homemade seitan

Instructions

    1. Take 4 bundles of collard greens and rinse them thoroughly.
    2. Now assemble the greens into a tight roll and chop them on a cutting board. Liberians love to slice their greens thinly to look beautiful but you can slice yours any size you wish. 
    3. Start cutting out the stems first. Then, slice the greens thinly.
    4. Put sliced greens into a bowl and keep it aside. You can use these sliced greens for up to 2 weeks.
    5. Heat half a cup of vegetable oil in a saucepan over medium flame.
    6. Add 3 cloves of chopped garlic and chopped yellow onion. Sauté for about 3 minutes.
    7. Then add over 14 ounces of canned tomatoes. Turn the flame to high heat.
    8. Add sliced collard greens to the pan and stir well to combine everything.
    9. Add more greens. Sprinkle diced half an onion over greens and mix all.
    10. Add 1 tablespoon of baking soda. It helps soften the tough texture of collard greens.
    11. If you like, add more collard greens. Now stir to combine all the contents.
    12. Add 1 teaspoon of salt and 2 and a half cups of vegetable broth.
    13. Add 1 diced habanero and 430 grams of homemade seitan.
    14. Now cover the saucepan and let it boil for around 30 minutes at medium-high flame. 
    15. Remove the lid. You will find the greens tender and welted. 
    16. Allow to cook further till the liquid reduces as per your desire. Cooking these a bit longer will also allow all the flavors of spices and vegetables to mesh in. As a result, you will experience an enhanced taste of the dish. 
    17. Turn off heat. Serve hot with rice or eat as-is.

Notes
