Our Egyptian- Lebanese red lentil soup hit all marks. It is delicious (we all like that), hefty (food that stick to the bones), has healthy fats with good amount of protein, and best of all it is a one pot meal! A vegetarian’s wet dream! This Egyptian meal is popular for a reason and will soon be popular among plant-based dinner recipes for beginners.

Note, I will eat anything with cilantro in it, which shows how much I love it! lol! First, I didn’t know there are people who do not like cilantro. Apparently, it taste like soap to them. Yikes!

What’s worst, some people say those who do not like cilantro have serial killer behaviors. It is a rumor, or false statement, right? Anyways, if you dislike cilantro, do not be alarmed. I don’t think you are a serial killer. Simply use fresh parsley in your Egyptian red-lentils soup or omit it from the recipe. You must use fresh garnish, it makes the soup sing!

Best Egyptian-Lebanese Red Lentil Soup

Egyptian red lentil soup method is simple but the taste is divine. The ingredients we require for this soup are the most common seasonings probably available at home.

As all Egyptian recipes are normally stuffed with legumes and veggies, this one is no different. Red lentil is the big deal here.

So, let’s begin cooking our red lentil soup.

Just carry out the following steps:

Ingredients

  • 1.5 cups Red Lentils
  • ¼ (Quarter) yellow onion diced
  • 2TBs Oil
  • 2 Cloves garlic mince
  • 6.5 cups water
  • half tsp coriander*
  • 1.5 tsp Cumin
  • 1tsp chili powder (optional)
  • 1 bunch cilantro (optional)
  • half Tablespoon salt

Instructions

    1. Heat the oil in a cooking pot. Keep the flame medium-high.
    2. Add 2 cloves of minced garlic and a quarter of chopped onions.
    3. Sauté until onion is translucent.
    4. Meanwhile, wash the lentils and set aside to soak.
    5. Add half a teaspoon of crushed coriander seeds or ground coriander t the onion mixture. Stir-fry for a 2 minutes.
    6. Add soaked red lentils and fry for a couple of 2 minutes.
    7. Pour six and a half cups of water, mix all the ingredients and cover it. Keep the cover of the pot slightly opened. You can tilt the lid to keep prevent the beans from foaming over.
    8. Bring the water to a boil. Then cover it completely.  Let it boil for 20-30mins.
    9. Remove the lid and properly mix the contents.   
    10. Reduce the heat and Simmer the soup.
    11. Add your salt, ground cumin. (Just so you know, cumin is the most common spice used almost in all Egyptian recipes). coriander and chili powder. Chili powder is optional. You can add or lessen the quantity as per your tastes.
    12. Mix everything and simmer for 3 minutes on low heat.
    13. Serve hot. You can garnish the soup with cilantro if you like. Don't forget your pita bread. Enjoy!
